WHAT IS A SPECIALTY FOOD?
There’s no hard-and-fast rule but typically ‘specialty foods’ are defined as unique and high-value food items made in small quantities from high-quality ingredients differentiated by their originality, authenticity, ethnic or cultural origin, specific processing, ingredients, limited supply, distinctive use, extraordinary packaging or channel of distribution. Think specialty flavored bbq sauces, nut oils, bean-to-bar chocolate, etc. If your products are made in small batches- they fall into this category.
MAREN TROCKI is the Director of Dairy & Frozen at The Fresh Market, based in Greensboro, NC, overseeing the strategic plan for a wide variety of categories – everything from frozen pizza to yogurt. As Director, Maren has committed to sourcing traditional, hard to find foods from around the world, as well as the latest in product innovation. Prior to The Fresh Market, Maren worked at West Point Market in Akron, Ohio, and Southern Season in Chapel Hill, North Carolina. Maren has nearly two decades of experience in the Grocery industry and has cultivated a broad knowledge of specialty foods. Maren has been a member of the Specialty Food Association since 2001 and served on the Retailer Network Council.
